What is Stainless Steel

This question may seem like something you are too embarrassed to ask, but let’s ask, together, and know the answer to it.  To put it simply, stainless steel is an alloy—meaning a metal made by combining two or more metallic elements—of carbon and iron. This will not affect the performance of the cookware, but presumably you, like me, would like to keep your cookware looking bright and shiny at all times. 1: How to clean food residue or buildup from the cookware. If bits of food have stuck and crusted onto your cookware, soak your cookware in warm, soapy water for several hours. After that, drain the water and then use a scouring pad to scrub off the built-up food. If possible, do no use steel wool pads, although effective, as they are very harsh on the surface of the cookware.

2. How to clean brown spots or discolored areas from the cookware. Brown spots or discolored areas are largely caused by constant high heat. In this respect, the higher the chrome content in the stainless steel, the less prone it is to happen, according to the Cookware Manufacturers Association. So whenever possible, try and get the 18/10 stainless steel, which numbers refer to the composition of the steel with 18% chromium and 10% nickel. The other numbers you will commonly see are 18/8 and 18/0, but once again, try getting the 18/10 steel.

But anyway if brown spots occur, simply sprinkle some Bar Keepers Friends along with a little water, and then use a good scrubbing pad to remove them. Optionally, you may also use a combination of baking soda and warm water, and then a dry cloth or sponge to scrub them off.

3. How to clean any water spots from the cookware. Water spots can occur if there is high mineral content in your water, also known as hard water, or if your cookware has been exposed to added compounds like fluoride. If they occur, simply douse the pots and pans with some club soda (yes you heard it right), rinse them off, and then use a clean cloth to wipe them dry. If possible, try hand drying your pieces, as this will most likely prevent the water spots from occurring in the first place.

How to Choose Stainless Steel Cookware

More often than not, when you select a stainless steel cookware, you will be spending quite a bit of money on it. Therefore, it should satisfy you in more ways than one. This means it should last for a very long time, be very versatile, and perform well—not to mention also be very easy and comfortable to use.

Immediately, the first thing that comes to mind with which fulfills these criteria is the fully clad tri-ply stainless steel. Fully clad means the cookware has an aluminum core that extends all the way up the cookware’s sides, ensuring even heat distribution, whereas tri-ply means three layers have been bonded together to form the cookware. Usually, for a tri-ply cookware, the three layers fused together will be stainless steel-aluminum-stainless steel, indicating two layers of stainless steel surrounding an aluminum core. As a result, you will benefit from the advantages conferred by both materials instead of only one while at the same time avoiding the disadvantages presented by one material.

If combining three layers is better than one, why not combine more, you may ask. Yes, in the world of ply cookware, you also have the option to choose 5-ply and 7-ply, even. These options do in fact have more materials bonded together; however, the pros have tested them and said tri-ply actually heated more evenly. In other words, what they are really saying is that there is no point getting beyond the tri-ply. Moreover, as more layers fuse into the cookware, they will also be more expensive.

Of course, while the fully clad tri-ply cookware is very much recommended, its price may not be for everyone. For something a little more down to earth, and can also tackle any cooking job without any hiccups, you can get the stainless steel cookware with tri-ply disks, also known as encapsulated bottoms. This type of cookware is a notch below fully clad, but it can distribute heat more evenly as compared to pure stainless steel alone.

So, at the very least try to get a stainless steel cookware with tri-ply disks instead of one that is made from a single piece of stainless steel.

cuisinart multiclad pro I know asking you to drop more than $600 for the best stainless steel cookware set is not easy, even though it’s a buy-it-for-lifetime set. The good thing as a consumer is you have choices. And a very solid option, which is also my top pick best cookware set 2017 is the Cuisinart MultiClad Pro cookware set.

With a fully clad tri-ply construction, the Cuisinart MultiClad Pro set is also a knockout performer in heat conduction, but was slighty outdone by the All-Clad set. Chicken breasts have been reported to be sauteed until golden brown, though some pieces were lighter than others, and caramel to be made until it appeared even-colored, though more swirling was required, in its skillet and saucepan respectively. Also, caramel took longer to make in this saucepan than the All-Clad saucepan.

As for the handle, the MultiClad Pro set offers stick handles that are secured with rivets, with an appropriate length and angle. However, because they are more narrow and thin than the handles of the All-Clad set’s pieces, they are not as comfortable to use than the latter.

If you for some reason don’t quite fancy the Cuisinart brand in my Cuisinart MultiClad Pro recommendation but still like all that it has to offer,  then this Calphalon Classic set will make a great option. I say this because in terms of how the Cuisinart MultiClad Pro set compares to this set in construction, design, performance, and even price, they are very similar.

Both the Cuisinart MultiClad Pro set and this set have the fully clad tri-ply construction. Both have a brushed stainless steel exterior and mirror finish interior. And both distribute heat really well, ensuring even cooking, but with more effort required as compared to my top pick.

The main difference between the two sets lies in what’s included in their sets. While the Cuisinart MultiClad Pro offers 12 pieces in its set, the Calphalon Classic offers 10 pieces. The former’s set includes 2 saucepans, 2 skillets, a saute pan, a stock pot, and a steamer insert; while the latter’s set includes 3 omelette pans, 2 saucepans with lids, a chef’s pan with a lid, a stock pot with a lid, and a saute pan with a lid.

Which cookware set you should select then, besides the brand consideration, should be based on your consideration of the pieces you prefer in the cookware set. Personally, I prefer the MultiClad Pro set, as I like the steamer insert included in it. But that’s just me, as you will certainly have your own personal preference.

There are a few special nuances that keep me so attached to this saute pan. The feel of the pan, the construction of the pan, and even the handles of the pan assure me that this pan will last a lifetime. The handle on this pan is also very sturdy. I wasn’t ever worried when I was sauteing or braising any of my ingredients.

I am glad I spent my cash on the Cuisinart Chef’s Classic Stainless 16-Inch Rectangular Roaster. This kitchen cookware has made roasting fun. It has a curved rack that holds and supports my chicken and turkey, and it is also large enough to accommodate a larger roast.

It has stainless steel handles that are well riveted. This gives me a much easier time to place the roaster in the oven. The solid and durable cookware also circulates heat evenly, which allows my chicken or turkey to drain well as it cooks.

The Cuisinart Chef’s Classic Stainless 16-Inch Rectangular Roaster is dishwasher friendly, but I also find it very easy to hand wash. If any alteration was to be made to the roaster, I would suggest that the manufacturer fits the handles straight out of the roaster rather than on the sideways.

This Calphalon stainless steel dutch oven is the best  there is. On the pan’s exterior is beautiful long handles that offer a firm grip, even when the pot is full. In addition, they remain cool to hold even when the pan is hot.

This dutch oven has an aluminum base that ensures the pan heats fast for efficient cooking. This base is also safe for use on a broiler, oven, and stove. When using this 5-quart dutch oven, you need not worry about draining your liquids. Its covers have straining holes that fall in line with pour spouts. The great thing about this All Clad 600822 cookware set is the impressive heat control. The good thing about control is that you’ll be able to create masterpieces if you’re good at cooking. The bad thing about control is that you’ll burn your food if you don’t know when to turn down the heat.

If you’re transitioning from stainless steel to these copper cookware, remember to start with lower heat than you would normally use. It’s easier to crank up the heat when you need it because the copper core will help heat up the cookware real fast.

As the heat is distributed evenly with this set of great quality, I’m happy to see that food doesn’t burn in spots and the cookware is so easy to clean up afterward.

My favorite piece of All Clad copper core cookware is the 5-ply fry pan , but if you feel like you can afford to splurge on the whole set , go ahead and get it. You will never regret the purchase and it will certainly last you a lifetime or more.

Best Tri-Ply Copper Cookware Set – Calphalon Tri-Ply 10-Pc Set

The Calphalon Tri-Ply cookware set is an excellent copper cookware set. It has an aluminium core and a copper exterior that makes it very sensitive to temperature changes. The 18/10 stainless steel interior also was an excellent touch. This non-reactive surface enables me to cook just about anything using this 10-piece set of cookware.

I can even use these pots and pans for my signature sear and bake because all of these pieces are oven friendly up to 450. The set has a saute pan, 2 omelet pans and 3 saucepans which is more than enough for any home cook. This set is also sturdy and versatile enough to be used by professional chefs.

The saucepans are the best pieces of copper cookware. I simply need to deglaze this 2 ½ quart saucepan and I get perfect sauce or gravy finish every time. Thanks to the stainless steel lining, bits and pieces of ingredients that I used naturally stick to the bottom and can be deglazed easily.

Stews were also easy to make because I could simmer or boil whatever I wanted thanks to the deep design. The stainless steel lid also kept the moisture in so the broth I was making never dried up. Obviously, be removing the lid you’d be able to thicken whatever you were making.

Copper transmits heat well so it adapts to heat changes very fast. This is why it is excellent for cooking everything except ingredients that are too acidic or alkalic, because copper is rather reactive to these substances.

Best Cast Iron Griddle – Lodge L9OG3 Pre-Seasoned Griddle

lodge griddle My mom used to make her signature Saturday morning pancakes using a cast iron round griddle.

Which is why I couldn’t resist when I saw the Lodge round griddle . The first time I used this piece of cast iron cookware, I was brought back to my childhood.

The round griddle has a solid hardy build and since it was pre-seasoned, I immediately whipped up some pancake batter and started making pancakes. On my first try the pre-seasoned surface wasn’t non stick enough, so I rub some meat grease on it and into the oven it goes for more seasoning.

After a few rounds of greasing and baking the pan, now I can flip pancakes as if it were a teflon pan. Being on the heavier side compared to other cookware I use, the griddle sat firmly on my stove top. I’m glad for the weight because I really dislike those light weight nonstick griddles that have heavier handles and will fall off the stove.

This is a must-bring for camping trips too! It’s just the right size.

Lodge L5HS3 5-Piece Pre-Seasoned Cast-Iron Cookware Set Rarely would anyone buy the whole set of cast iron cookware, but if you’re determined to build those arm muscles, I highly recommend getting this 5-piece cast iron cookware set from Lodge. This set has the skillets and griddle of just the right size, and there’s also a dutch oven with cover for the stews.

The skillets are 8-inch and 10.25-inch (the one I recommended above) while the griddle is the size I reviewed above as well. The dutch oven is a 5-quart size with a cover that fits the 10.25-inch skillet too.

A warning though, check prices for this set and for separate pieces sold on Amazon. Sometimes you could actually get separate pieces for cheaper!

Best Budget Cast Iron Cookware Set – Outdoor Gourmet 5 Piece Set

Outdoor Gourmet 5 Piece Cast Iron Cookware Set A much cheaper cast iron set would be this one from Outdoor Gourmet, which is a good deal if you are looking for a budget set for pit fire cooking and know how to handle cast iron cookware.

This set comes with two skillets of 8-inch and 10-inch as well, a reversible rectangle griddle and a Dutch oven with feet.

On the downside, this cookware set doesn’t come pre-seasoned, so you’ll have to season it before use. I recommend seasoning for a few times before the first use to get a truly non stick surface. Unfortunately for beginners, there is no included instructions for seasoning the cookware. You can watch this video though.

What makes a good nonstick cookware

Besides releasing food effortlessly, a good nonstick cookware should also have all the good traits you normally find in other cookware. This means it should have great heat distribution, maneuverability, and comfort.

Great heat distribution will allow you to cook your food evenly, and will also thereby make the nonstick coating last longer. Great maneuverability will allow you to better handle fast-cooking foods. Finally, great comfort, by providing a good balance between body and handle, will allow you to cook with ease, as well as easier to achieve a full, clean flip.

Types of nonstick coatings

There are two types of nonstick coatings you will find in the market today:

PTFE : Though PTFE (Polytetrafluoroethylene) is commonly associated with the coating for cookware, it actually has a wide range of applications. Believe it or not, it’s a common material in joint replacements. Because it doesn’t absorb water, can withstand extremes of heat and cold, reduces friction, and resists UV rays, this makes it ideal for them. Understandably so, then, that the unique makeup of PTFE also lends itself particularly well in cookware use.

Oftentimes, when talking about PTFE, you will see it commonly referred to as Teflon. That’s because Teflon is also a brand name that has become the generic name for PTFE. Here is an interesting fact: Like so many great discoveries, Teflon was not something that was discovered by design but by accident. The inventor, Dr. Roy Plunkett at Chemours (formerly known as DuPont), was experimenting with two chemical compounds, namely tetrafluoroethylene (TFE) with hydrochloric acid (HCl), when the mixture reacted to create an insoluble. As the state of this substance was chemically stable and particularly useful upon further analysis, chemists then went on to develop it further, which later became Teflon.

Today, Teflon has become the gold standard in nonstick coatings, and it’s said to last longer than ceramic ones. Despite this though, it’s not uncommon to see many still in favor of the latter. Much of this is largely attributed to the the health concerns surrounding its use. It’s said when exposed to high temperatures, the Teflon coating will start to degrade and release toxic fumes that may kill pet birds and cause people to develop flu-like symptoms.

So, is PTFE or Teflon coating safe to use? Yes, it is, as long as you do not exceed the recommended maximum temperature for cooking with it which is 500 degrees Fahrenheit. This means cook your food over low to medium heat but never over high heat with it.

Ceramic: The other type of nonstick coating is ceramic-based which is made from silicon and oxygen. More specifically, it is made by using silicone oil in the pores of the cookware’s surface. While ceramic coating is synthetic free, and is thought to be more eco-friendly than PTFE, it doesn’t last as long as PTFE though. In fact, many have said that it only lasted about a year, after which it would generally be rendered replaceable. The main cause of this is its silicone oil which will eventually get washed or cooked away, even with proper care.

Speaking about proper care, here are some tips on how to use and care for nonstick cookware.

How to use, care, and maintain nonstick cookware

It is important to note that all nonstick cookware sets will eventually lose their slickness even with proper care. Regular use and exposure to heat will wear out the coating, after which you need to replace the cookware once it becomes completely dull.

While you can’t avoid the inevitable, you can certainly prolong the life of the cookware. Below are some tips you can follow to do this.

  • Nonstick pans will require some fat to be effective; therefore, dab a small amount of vegetable oil or butter onto them before you start cooking.
  • Don’t heat your nonstick cookware on the stove while it is empty. This will cause it to overheat which may break down the coating.
  • This may sound counter-intuitive but never use nonstick cooking spray on your nonstick cookware, as this may make the cookware more prone to sticking.
  • Though some nonstick cookware sets are advertised as being dishwasher safe, we advise against this, as heat, harsh detergents, and metal-on-metal contact may damage the coating.
  • To clean your nonstick cookware, use hot, soapy water with a soft sponge, and never use steel scrubbers or heavy-duty sponges.
  • Don’t use metal utensils on your nonstick cookware. Only use wooden, plastic, or silicone utensils.
  • Never run your nonstick cookware under cool water while it’s still hot. Doing this will rapidly wear down the coating.
  • If possible, don’t stack your pots and pans on top of each other, as this may scrape the coating.  If you must insist, at least place a cloth between them.
